Roasted tomato basil soup:

Roasted tomato basil soup is a delicious and flavorful soup made from ripe tomatoes that have been roasted in the oven to bring out their natural sweetness and depth of flavor. The roasted tomatoes are then combined with fresh basil, garlic, onions, and a touch of cream to create a velvety smooth and rich soup.

Here's a simple recipe to make roasted tomato basil soup:

Ingredients:

8-10 large ripe tomatoes

4 cloves of garlic, minced

1 large onion, chopped

2 tablespoons of olive oil

1/4 cup of fresh basil leaves, chopped

2 cups of chicken or vegetable broth

Salt and pepper, to taste

1/4 cup of heavy cream (optional)

Instructions:

Preheat your oven to 400°F (200°C).

Cut the tomatoes in half and place them cut side up on a baking sheet.

Drizzle the tomatoes with olive oil and sprinkle with salt and pepper.

Roast the tomatoes in the oven for 25-30 minutes, or until they are softened and slightly charred.

In a large pot, heat the remaining olive oil over medium heat.

Add the chopped onions and minced garlic and cook until the onions are soft and translucent, about 5 minutes.

Add the roasted tomatoes to the pot, along with the basil and broth.

Use an immersion blender to blend the soup until smooth, or transfer the mixture to a blender and blend until smooth.

Return the soup to the pot and heat through.

Stir in the heavy cream, if using, and season with salt and pepper to taste.

How to serve:

Serve the roasted tomato basil soup hot, garnished with a sprinkle of fresh basil and a dollop of sour cream, if desired. Enjoy!
