Samosa recipe:

Here is a recipe for traditional Indian samosas. Samosa is a popular snack food in South Asian cuisine, especially in India, Pakistan, and Bangladesh. It is a triangular-shaped pastry filled with a mixture of spiced vegetables or meat, and deep-fried to a crispy golden brown. The pastry is usually made from a flour-based dough that is rolled into thin sheets and then folded around the filling. 

Some common fillings for samosas include potatoes, peas, onion, and spices like coriander, cumin, and garam masala. Samosas are typically served with mint chutney, tamarind chutney, or other dipping sauces. They are often enjoyed as a snack, appetizer, or as part of a larger meal.

Ingredients:

2 cups all-purpose flour

1 teaspoon salt

2 tablespoons vegetable oil

½ cup water

2 tablespoons ghee or vegetable oil

1 medium onion, finely chopped

1 teaspoon ginger, grated

1 teaspoon garlic, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon ground turmeric

½ teaspoon ground cinnamon

½ teaspoon ground cardamom

½ teaspoon ground black pepper

½ teaspoon cayenne pepper (optional)

1 cup frozen green peas, thawed

2 potatoes, peeled and diced

¼ cup cilantro, finely chopped

Salt to taste

Vegetable oil for deep-frying

Instructions:

To make the dough, mix together the flour, salt, oil and water in a bowl until it forms a smooth dough. Knead the dough for about 5 minutes and then cover it with a cloth and let it rest for 30 minutes.

In a pan, heat the ghee or oil over medium heat. Add the onion and cook until it is soft and translucent.

Add the ginger and garlic and cook for 1 minute.

Add the cumin, coriander, turmeric, cinnamon, cardamom, black pepper, and cayenne pepper, if using. Cook for another minute.

Add the peas and potatoes and cook until the potatoes are soft, about 10-15 minutes.

Stir in the cilantro and salt to taste.

Divide the dough into 12 equal portions and roll each portion into a ball. Flatten each ball into a disk and roll it out into a circle about 6 inches in diameter.

Cut each circle in half and form a cone shape with one half of the dough, by overlapping the two cut edges. Fill the cone with about 2 tablespoons of the filling and then seal the open edges of the cone together to form a triangle-shaped pastry. Repeat with the remaining dough and filling.

Heat the oil for deep-frying in a large pan over medium heat. When the oil is hot, add the samosas and fry until they are golden brown on both sides, about 5 minutes.

How to serve:

Drain the samosas on paper towels and serve warm with your favorite dipping sauce.
